It's a strange encoding, which has Aleph at bytecode 128. To convert it to ISO 8859-8 (Hebrew) you have to move bytecodes (decimal) 128-154 to codes 224-250, and of course, you have to reverse them on a typical screen to read right-to-left Hebrew-style. But you can get IS0 8859-8 fron the files with (on UNIX): zcat bereishit.Z | tr '[\200-\232]' '[\340-\372]' (bereishit is the Hebrew name for Genesis.)
